Welcome back to What’s Cooking @ HEPL! I am Heidi Herald, a Public Services Librarian at Hamilton East Public Library, and I review one of the library’s cookbooks quarterly. This month, I am reviewing Budmo! Recipes from a Ukrainian Kitchen by Anna Voloshyna.

The first recipe I tried was Roasted Peppers. First, you roast the peppers in a very hot 500-degree oven. They are then stuffed with cheese, herbs (I used dill and parsley), garlic, and Greek yogurt. They were delicious! These make a perfect snack or appetizer.
The next recipe I tried was the Vegetarian Russian Potato Salad. This recipe calls for potatoes, carrots, peas, mayonnaise, sour cream, eggs, dill pickles, and fresh dill, parsley, and chives. It is wonderful. I brought it to work to share with my coworkers, and everyone loved it!
I also made the Garlicky Georgian Chicken. I wasn’t sure about this recipe at first. The chicken is cooked in six cups of whole milk with a whole head of garlic, lemon strips, and bay leaves. However, it turned out tender and delicious! The chicken is paired with a condiment called lyok which primarily consists of dill, parsley, garlic, and oil.
Finally, in the video below I make Sweet Pumpkin Rice Kasha. This is a sweet dish, much like rice pudding. Because pumpkin is out of season right now, I used the suggested alternative: butternut squash. It was very tasty!
